Put the "Lemon" in the Coconut~

 
 
Lemon-Coconut Cake
Ooooooooooooooooooooooooohhhhhhhhhhhhhhhhhhhhhhhhhhhh!!!! You're gonna love this cake!
If you got a hour to spare, then try this baby out!
 
Serves 12 * Hands-on 30 minutes * Total 50 minutes
 
Cake:
8 ounces (1 cup) butter, softened
2 cups of sugar
4 large eggs (separate the egg whites and egg yolks from each other)
3 cups (12.8 ounces) of all-purpose flour
1 tablespoon of baking powder
1 cup of milk
1 teaspoon of vanilla extract
 
Lemon Filling: 
1 cup of sugar
1/4 cup of cornstarch
1 cup of boiling water
4 large egg yolks, lightly beaten
2 teaspoons of lemon zest (which the lovely picture demonstrates)
1/3 cup of fresh lemon juice
2 tablespoons of butter
 
Cream Cheese Frosting:
1 (8-ounce) package of cream cheese, softened
4 ounces (1/2 cup) of butter, softened
1 (16-ounce) package of powdered sugar
1 teaspoon of vanilla extract
2 cups of sweetened flaked coconut
 
Extra:
2 mixing bowls
3 (9-inch) round cake pans
1 saucepan
A electric mixer (is highly recommended)
 
Time to Make the Cake!
 
1.
  • Preheat the oven to 350
  • Beat the butter until it is fluffy
  • Add sugar into the butter
  • Add in the egg yolks 1 at a time as you're still mixing

  • (In another bowl) Combine the flour and baking powder
  • Pour this mix into the first bowl along with milk
  • Beat until blended
  • Stir in the vanilla

  • Beat the egg whites (with an electric mixer) until it becomes stiff
  • Put the egg whites mix into the batter
  • Mix it up
  • Pour the complete batter into the three cake pans

  • Bake 'em at 350 for almost 20 minutes
  • When it is to your approval take the cake out and let it cool for 10 minutes while it is still in the pan
  • [Optional-This step is for patient people lol] Remove it from the pan completely, and let it cool for an hour 
Woo! Almost there, now to make the filling~ [Best to do it when the cake is done/cooling]
 
1.
  • Combine the sugar and cornstarch in a medium saucepan
  • Add in boiling water
  • While it is cooking, stir/whisk it constantly until everything dissolves [Takes about 2 minutes]
  • Add in one-fourth of this mixture into a bowl that has egg yolks. (stir it up)
  • Then pour the egg yolk mixture back into the main saucepan 
  • Stir/whisk that all up
  • Add in the lemon zest and lemon juice
  • While it is still cooking, keep stirring/whisking it consistently
  • It will soon become thickened [Takes about 2-3 minutes]
2.
  • Remove from the stove (Don't like me and forget to turn off the stove :P)
  • Add in the butter
  • As it cools down, stir it occasionally
  • Lastly, spread the lemon filling between the cake layers as you're stacking the cakes on top of each other.
Here is how we make that sweet sweet icing!   
 
1.
  • Beat the cream cheese and butter together until they become fluffy
  • Add in powder sugar
  • Mix it together
  • Add vanilla
  • Mix it together...again
  • Boom! Now you're done~ *Throws confetti*
2.
  • Spread the frosting all over the cake
  • Sprinkle the coconut flakes on as a finishing touch
Da End: And there you have it! You just made your very own lemon coconut cake!~ Huzzah!
 
[Haha, the recipe said it takes 50 minutes, but that wasn't the case for me ^.^']
