An Apple Cake a Day Keeps Happiness Coming Your Way!

Apple Cake


Total time 2 hours / 12-15 servings

I learned something about myself as I put this cake blog together; I really like fruit in my cakes! I guess I'm just a fruity type of gal/jellyfish :P

I really like this cake because of the sweet flavor it offers, each bite is never disappointing!

Ingredients:
1 1/2 cups of chopped pecans
1/2 cup of butter, melted
2 cups of sugar
2 large eggs
1 teaspoon of vanilla extract
2 cups of all purpose flour
2 teaspoons of ground cinnamon
1 teaspoon of baking soda
1 teaspoon of salt
2 1/2 pounds granny smith apples (about 4 large apples) peel them and cut them into wedges

Extra:
Two medium sized bowls
A shallow baking pan
13x9 inch baking pan

Directions:
Step 1
  • Preheat oven to 350 degrees Fahrenheit
  • Bake 1/2 pecans in a single layer in a shallow pan for 5 to 7 minutes or until their lightly toasted. (stir them at the halfway point) 
Step 2
  • Get a medium size bowl and stir together the butter, sugar, eggs, and vanilla extract until it's blended 
Step 3
  • Then in a new bowl you combine the flour, cinnamon, baking soda, and salt together
  • Once it's all mixed together, pour it into the butter mixture, and stir until it's all blended. 
  • Now stir in the apples and the remaining 1 cup of pecans into the batter (Batter will be very thick at this point)
  • Spread batter into the lightly greased 13x9 inch pan
Step 4
  • Bake it for 45 minutes or until a toothpick inserted in center comes out clean.
  • Let it cool completely (about 45 minutes) Unless you're like me and now have a burned tongue XP
  • Spread a frosting of your choosing on top of the cake
  • Sprinkle the baked 1/2 cup on pecans on top!
